Berry Cheesecake

Berry cheesecake made healthier with a protein cookie base and Unicorn Superfood Beauty Blend Powder

1. Place the protein cookie in the bottom of the tin. Press to flatten and cover the base
INGREDIENTS
You will need a 4 inch spring form cake tin with removable base
- 1 x Quest Protein Cookie (we used Double Chocolate Chip flavour)
- 1/2 Quest Protein Bar (optional) (we used Chocolate Brownie Flavour)
- 2 tsps Unicorn Superfood Beauty Blend Powder
- 150g Cream Cheese
- 125g Sour Cream
- 1 tsp Gelatin
- 2 TBSP Boiling Water
- Sweetener of your choice (eg Stevia), to taste
- Approx 8 frozen Raspberries
METHOD
1. Place the protein cookie in the bottom of the tin. Press to flatten and cover the base
2. In a bowl, combine boiling water with gelatin
Stir to dissolve
3. Add cream cheese, sour cream, and Beauty Blend Powder to bowl
Using an electric beater, beat until smooth, approx 5 minutes
4. Add sweetener to taste, approx 1-2 tsps or to your liking
5. Pour cheesecake filling into the tin, over the cookie base
6. Cut protein bar into small pieces
Scatter over top of cheesecake along with the frozen raspberries if desired
7. Place in fridge for at least 1 hour to set
